Chicken and Rice Casserole

My family loves this recipe.  It’s easy to prepare, but it does take a while to bake.


3 chicken breasts, cut into cubes

2 cups chicken broth

2 cups long grain rice

1 can cream of chicken soup

1 can cream of mushroom soup

1 can cream of celery soup

Salt and ground pepper to taste

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/2 cup butter, cut into cubes

2 cups shredded cheddar cheese


-Preheat oven to 400 degrees.

-Spray a large casserole with nonstick spray (I used large lasagna pan).

-In a very large bowl, add all the ingredients EXCEPT  butter and cheese.  Mix.

-Arrange butter evenly over mixture.

-Cover with foil and bake 50 minutes.

-Add cheese and bake uncovered for an additional 25 minutes.

-Remove from the oven and let stand 15 minutes.
