Ginger Ale doesn’t seem to have the flavor it once did. It’s not as strong now as it used to be. Adam found this recipe for Ginger Ale or Ginger Beer that he has wanted to try for a long time. He loved it!
2 cups ginger peeled and grated
4 cups water
3 cups sugar
After you peel and grate the ginger make sure you have enough to fill a 2 cup measuring cup. Place 4 cups of water in a pot and bring to boil. Add the ginger and sugar. Zest the lemon and add that along with the juice to the pot. Bring the mixture to a boil and allow it simmer for 1 -2 minutes. With a bowl and fine sieve strain out the juice and dis-guard the pulp that is left. Place in jars to cool and or store until use. To make ginger ale just add 1/4 cup syrup to a 12 oz of club soda or use a soda stream machine. To make Ginger Beer add 1/4 cup syrup and 12 oz water to a 16 oz bottle. Add a very small pinch of yeast. Squeeze out the extra air in the bottle and allow it to sit on the counter for a few days until the yeast makes bubbles and the bottle is back to its normal shape. Open the bottle of the sink just in case the is too much pressure. Keep extra in the refrigerator so they don’t explode. There will be a slight amount of alcohol and the yeast will make the flavor a little bit different.
