This is a great recipe for lasagna.  We use this recipe every time and it’s tried and true.  It took some time to create and develop but now that we have one we really like, it makes it so much easier to know what I need to get at the store whenever I want to make it.


1 package lasagna noodles, cooked

1 pound hamburger

1 pound bulk sausage

1 Tbsp. parsley

1 Tbsp. basil

1 Tbsp. minced garlic

3 eggs

1 gallon Del Grosso sauce or 5- 24 ounces jars  (There’s a few ounces difference between a gallon and 5 jars but it doesn’t make a difference)

1 – 16 ounce container cottage cheese

1 – 15 ounce container ricotta cheese

2-16 ounce packages of mozzarella cheese (8 cups)

1 cup Parmesan cheese, plus an additional 1/2 cup to sprinkle on top

Fresh basil, diced if in season or 2 tsp. dried


Make cheese mixture and meat mixture.

CHEESE MIXTURE:  Mix ricotta cheese, cottage cheese, mozzarella cheese, 1 cup Parmesan cheese, 3 eggs, basil  and parsley.

MEAT MIXTURE: Brown hamburger and sausage.  Add garlic, basil and sauce.

In a large casserole (bigger than 9 x 13), layer lasagna noodles, cheese mixture and meat mixture.  Repeat layers 2 more times ending with the sauce mixture.  Sprinkle with the remaining Parmesan cheese.  Bake at 350 degrees covered for 45 minutes.  Uncover and bake an additional 15 minutes.  Let sit for 30 minutes to get firm.  Serve.

Homemade Lasagna and Garlic Bread

Oh yes he did.  My husband called the Punxsutawney cafeteria ladies a long time ago to get this pizza burger recipe.  I’m not sure why he loves them  so much but he does. Adam had these when he was in school quite a few years ago. It brings back good memories.  It’s not what anyone I know would call a pizza burger but that’s what they called them in Punxsy. They made them because they would use up leftover hamburgers and hotdogs.  We did not have leftovers so we did it the following way.


1 lb ground beef

1 lb hot dogs

8 ounce jar pizza sauce

8-10 slices American cheese

1 pack of hamburger buns



Cook ground beef and chop hot dog into a fine dice. We used a Ninja food processor. Add the hot dogs and sauce to the beef. Heat and stir until well mixed. Add the cheese to the top and mix until well blended. Preheat oven to 425 degrees. Place about 1/3 cup of the mixture on each bun face.  Now place in oven for 10 minutes. You could broil these but this works just as well.

Open Face Pizza Burger

This is an awesome recipe that is very easy and inexpensive to make.   The recipe is from Marguerite Wikander.  Marguerite passed away several years ago. She was a lovely Christian woman who served many meals to her very large family of 13 children.  She was a pastor’s wife to my home church when I was young, Grace Baptist Church.  She and my Grandma and Mom were great friends for many, many years.  Give Marguerite’s recipe a try.  I’m sure you won’t be disappointed.



1 pound lean hamburger

1 can cream of celery soup

1 can cream of chicken soup

1- 1 pound bag of noodles, cooked according to package, drained

2-3 Tbsp. soy sauce



Cook hamburger and onion in a large pot until hamburger is browned and onion is soft.  Add noodles, soups and soy sauce.  Serve.

Homemade Hambuger Helper

My friend, Holly M., shared this recipe with me.  It is very simple and very delicious.  I love crock pot meals.  It is one of the simplest ways for me to cook.  I can fix it and forget it and I love that!  This just has the right blend of all the right ingredients!  Thanks, Holly!  I will be making this again soon!



5 boneless, skinless chicken breast, halved

1- 15 ounce can pineapple rings, drained

1- 15 ounce can of mandarin oranges, drained  ( I used 2- 11 ounce cans instead)

1/4 lemon juice

1/4 cornstarch

1/4 brown sugar

1/2 tsp. ground ginger

1/2 tsp. minced garlic

1/2 tsp. salt

3 Tbsp. soy sauce

1 onion, cut into larger chunks

1 green pepper, cut into larger chunks



In a crock pot, whisk 1/4 brown sugar, 1/4 cup cornstarch and 1/4 cup lemon juice.  Add garlic, ginger, salt, and soy sauce.  Drain pineapple and mandarin oranges.  Place 6 pineapple slices on top of the mixture in the crock pot.  Place the chicken breasts on top.  Add remaining pineapple slices, mandarin oranges, pepper chunks and onion chunks.  Cook on low for 6 hours.  Serve over rice.

Slow Cooker Hawaiian Chicken

This is a fairly easy recipe for chicken lasagna.  It is from an Amish book that I have adapted a bit.  It is easier to cook the chicken the night before and place it in the refrigerator.  It helps to cut down on prep time.



9 lasagna noodles, cooked

4 cups cooked chicken, shredded or diced (about 2 medium chicken breasts)

1 can cream of mushroom soup

1 can cream of chicken soup

1 medium onion, diced

2 Tbsp. olive oil

1 Tbsp. garlic

Salt and Pepper to taste

1/2 cup sour cream

1/4 cup mayo.

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup Parmesan cheese



Preheat oven to 375 degrees.  Saute onion and garlic in olive oil for about 10 minutes until tender.  Make chicken mixture in a large bowl by adding all of the ingredients EXCEPT lasagna noodles and Parmesan cheese.  In a 9 x 13 greased pan, layer 3 noodles and 1/3 of chicken mixture.  Repeat 2 more times so the chicken mixture is on top layer.  Sprinkle Parmesan cheese on top and bake uncovered for 45 minutes.  Serve.

Chicken Lasagna

We love this recipe for Hungarian Goulash.  It is a combination of several different recipes from several different people that we combined into our own.  It is even better the next day and it makes enough for several meals!! It’s funny as I look at my original handwritten  recipe, I realize I have changed it already.  I add more sugar and garlic and I don’t use oil to fry the hamburger. Also, I used a quart  of canned tomatoes from my garden and 4 cups of juice but since I have used up my stockpile, I have had to  change to store bought canned tomatoes,which are only 28 ounces as opposed to 32 ounces in a quart.  Therefore, I had to increase the juice by a half cup.   It isn’t that different but it’s funny how I am constantly adapting to suit our tastes and what I have on hand.    I guess that’s a good thing.  If you try these recipes, please feel free to do the same.  By all means adapt to your family’s tastes and preferences. They will love you for it!!


1 pound lean hamburger

1 diced onion

1 diced pepper

1 Tbsp. beef bouillon

1 Tbsp. minced garic

3 Tbsp. paprika  (this is not a typo, it seems like a lot but trust me it tastes great)

1- 28 ounce can diced tomatoes

4 1/2 cups tomato juice

2- 6  ounce cans tomato paste

2 Tbsp. soy sauce

1/2 cup sugar  (try 1/4 cup and then add more if you like, we use about 1/2 cup)

1 pound  box Celantani macaroni, cooked according to package



Cook hamburger in a large pot until browned.  Add onion, pepper and minced garlic.  Cook for about 10 minutes until tender.  Add the remainder of ingredients (except pasta).  Simmer for 20 minutes. Add pasta and serve.

Goulash with Crusty Bread

We love this simple recipe.  It calls for a just a few ingredients and it takes about 5 minutes to throw in the crock before you head out the door.  This is a great comfort meal!


1 pound stew meat

1/2 onion, chopped

1 can cream of mushroom soup

1/4 cup water

1 Tbsp. Worcestershire sauce

4 ounces cream cheese



Place all the ingredients into the crock pot, EXCEPT cream cheese.  Right before serving, mix in 4 ounces of cream cheese. Stir.   Serve over noodles.  YUM!

Beef Stroganoff over Noodles and Peas

Adam and I both turn our noses up at salmon patties because they were  not a pleasant food experience whenever we were younger.  Neither of us liked them.  My boys, however, LOVE salmon and so we tried making salmon patties for them to see what they thought.  We were all pleasantly surprised!  I will definitely be making these again and my canned salmon was under $3.00 at Aldi’s and was a great quality.

1- 14.75 ounce canned salmon, drained and bones removed

2 Tbsp. butter

1 medium onion, shredded

1 tsp. minced garlic

1 cup Ritz cracker crumbs

2 eggs, beaten

1/4 cup parsley flakes

1 tsp. dry mustard

1 tsp. Worcestershire sauce

1/4 tsp. salt

1/4 tsp. pepper

1 Tbsp. lemon juice

Vegetable oil for frying patties



Melt butter in large skillet over medium heat.  Add onion and garlic and cook until onions are tender.  In a medium bowl, combine all ingredients and mix until well blended.  Shape into 6 patties.  Cook patties in a skillet filled with 1/4 inch hot vegetable oil until browned about 3 minutes on each side.  Place on a plate with a few paper towels to let the towels soak up any excess oil.


2 Tbsp. butter

4 tsp. flour

3/4 cup milk

1/4 tsp. salt

1 Tbsp. dill


Melt butter in a saucepan over medium heat.  Stir in flour to form a smooth paste.  Gradually stir in milk.  Bring to a boil, stirring constantly.  Cook for 2 minutes or until thickened.  Remove from heat and stir in salt and dill.  Serve with salmon patties.

Salmon Patties with a Dill Sauce

This is a great way to make venison steak.  My boys love it.

1 1/2 pounds venison

2 chopped onions

1/2 stick butter

1 tsp. granulated garlic

1 tsp. seasoned salt

Pinch of black pepper



In a large skillet, melt butter and add onions.  Saute about 5-10 minutes.  Place venison steak on top of the onions and season with granulated garlic, salt and pepper.  Cook on low for 45 minutes covered.  You really don’t need to do anything.  Don’t stir or flip.  Uncover and cook an additional 20 minutes to let the liquid reduce.  Serve.

Slow Roasted Venison Steak served with homemade Macaroni and Cheese.

This is one of the most requested meals from the boys.  The boys love ham balls and rice.  I would prefer scalloped potatoes with mine but rice is easier so I honor their request.


3-4 pounds ham loaf mix (ham and pork mix)  The recipe calls for 3 pounds but I used 4 today and it tasted just as good.

1 sleeve saltines crackers, crushed or about 1 cup

1 cup milk

2 beaten eggs


2 cups brown sugar

1 cup vinegar

2 Tbsp. mustard



Mix up ham balls by crushing  a sleeve of saltine crackers and place in large bowl.  Add 1 cup of milk and 2 beaten eggs.  Stir together.  Add ham loaf mix and mix together.  Use your hands to mix.  This works the best.  Form into balls and place into a baking dish larger than 9 x 13.

Mix sauce ingredients by whisking brown sugar, vinegar and mustard.  Drizzle over ham balls.

Bake uncovered at 350 degrees for 30 minutes.  Flip ham balls over and bake another 30 minutes.  Serve.
